One school I know of, and I personally feel it's one of the best animation schools around, is AnimationMentor.com It's all on line so you can do it from anywhere in the world where you have a broadband conection. It's a year and a half long school though and not a workshop.

I curently reside in Montana, and my employer would like my art department to partisipate in some classes to ferther our experince in Maya and other aspects of animation and art to better our work. My self I have a BA in animation so I need to move up from the beginner lvl to the advanced lvl or even the expert lvl.
It has to be workshops that are no longer than a week long and just focus on one aspect of 3D, i.e. Modeling.

Maya ships with tutorials. I'd just use those.
There are also dozens of 3rd party how-to books and videos, and hundreds of online tutorials.
